StrainX Bio is a synthetic biology and precision fermentation startup developing next-generation functional ingredients for the global food and beverage industry.

Role Overview
We are looking for a Food Application Scientist with hands-on experience in developing and optimizing food and beverage formulations using novel ingredients. The ideal candidate will bridge the gap between fermentation science and consumer product applications, translating new ingredients into real-world food systems.
This role involves formulation design, sensory optimization, ingredient functionality studies, and collaborating with R&D and business teams to demonstrate proof-of-concept for various food categories.

Key Responsibilities
i) Formulation Development: Develop and optimize formulations incorporating novel proteins, or bioactives into various food and beverage matrices (e.g., dairy, non-dairy, beverages, bakery, confectionery, nutraceuticals).
ii) Functional Characterization: Evaluate ingredient performance, stability, solubility, and interactions with other food components across pH, temperature, and processing conditions.
iii) Prototype Creation & Sensory Evaluation: Create product prototypes and conduct internal sensory evaluations to assess taste, mouthfeel, and flavour masking/blending properties.
iv) Analytical & Regulatory Understanding: Work closely with the analytical team for compositional and stability testing. Ensure awareness of food regulatory frameworks (FSSAI, GRAS).
v) Documentation & Reporting: Maintain detailed records of formulations, experimental designs, and sensory outcomes. Prepare technical reports and presentation decks for internal and external stakeholders.

Required Qualifications
M.Tech / M.Sc. / Ph.D. in Food Technology, Food Science, Dairy Technology, Biotechnology, or related field.
– 3–5 years of industrial experience in food formulation, product development, or application science within a food, flavour, ingredient, or FMCG company.
Strong knowledge of proteins, hydrocolloids, emulsifiers, and flavor systems.
– Hands-on experience with analytical and sensory techniques used in product evaluation.
– Understanding of food processing and ingredient interactions under various formulation conditions.
